The Honesuki Maru is designed for heavy-duty butchery tasks and excels when used with an overhand grip to break down hanging meats. Its shape makes it ideal for working through joints and breaking down primal cuts. When properly sharpened, it delivers precise cuts while maintaining strength. However, its stiffness makes it less suitable for finer tasks like trimming and seaming.

SK Steel is a high-carbon tool steel widely used in Japanese knives for its toughness and excellent edge retention. It offers a sharp, durable edge that performs well for heavy-duty kitchen tasks. While not stainless, SK steel can achieve a very fine edge and is relatively easy to sharpen. Because it lacks significant chromium content, it requires regular care to prevent rust and staining. Many chefs appreciate SK steel for its robust cutting ability and the classic patina it develops over time, adding character and protection to the blade.
