The Takayuki Ueki Basami are traditional Japanese scissors originally designed for pruning, but their sharpness, control, and fine blade profile have made them increasingly popular in the kitchen as well. These shears excel at delicate, precision tasks, like snipping herbs, trimming fish fins, preparing garnishes, or cutting through small poultry bones and shellfish legs with accuracy.
Made from high-quality Japanese high-carbon steel, the blades hold a fine, razor-sharp edge that glides through ingredients with minimal effort. Unlike standard kitchen scissors, the slim and pointed tips of the Ueki Basami allow for highly controlled cuts.
The hand-forged design, often finished with a traditional Kurouchi finish, gives the scissors a rustic and elegant appearance while helping protect the steel from rust. Though primarily carbon steel, the blades should be hand-washed and dried immediately after use to preserve their sharpness and prevent oxidation.
