The Gyuto is a versatile kitchen knife with a slim blade and a pointed tip. The tip makes it easy to cut precisely and is great for slicing meat and fish. The slight curve of the blade lets you cut smoothly with less effort.
Aogami No.2 is a traditional Japanese high-carbon steel made by adding chromium and tungsten to Shirogami No.2. This gives the steel added toughness and improved edge retention, while still allowing it to take a very sharp edge. It’s a favorite among knife makers and chefs for its balance of cutting performance and ease of sharpening. Though reactive and prone to rust if not properly maintained, many blades come with a Kurouchi finish to help protect the steel and give the knife a rustic, authentic look.
