The Funayuki Knife is a traditional Japanese utility knife originally used by fishermen (funayuki means “boat-going”). Designed to handle everything from cleaning fish to slicing vegetables right on the boat, it’s lightweight, versatile, and easy to control. Its pointed tip and gently curved edge make it suitable for both precision cuts and everyday prep.

Aogami No.1 is a high-carbon steel made by adding more carbon and tungsten to Aogami No.2. This results in a steel that can take an even sharper edge and hold it longer. It’s highly regarded for its cutting performance and is often chosen by professional chefs who prioritize edge retention. Like other carbon steels, it’s reactive and requires care to prevent rust, but many say the performance is well worth it. Knives made with Aogami No.1 often feature a Kurouchi or satin finish to help protect the blade and give it a traditional Japanese character.
Avoid using a twisting motion when cutting, as this can damage the blade.
