The Nakiri is a traditional Japanese vegetable knife with a straight, flat blade designed for clean, precise chopping. AUS-10 is a high-grade Japanese stainless steel that offers an excellent balance of sharpness, edge retention, and corrosion resistance. With higher carbon content than AUS-8 and added vanadium, it achieves a finer grain structure, allowing for a sharper, more durable edge. It’s often compared to VG-10 for its performance but is slightly easier to sharpen. Thanks to its stainless properties, AUS-10 is low maintenance while still delivering the cutting precision needed in a professional kitchen. A great choice for chefs who want dependable performance without the worry of rust.
