The Nakiri is a traditional Japanese vegetable knife with a straight, flat blade designed for clean, precise chopping. Its broad blade makes it easy to cut through vegetables with a simple up-and-down motion, while the thin edge ensures smooth, effortless slicing. The flat blade also makes scooping and transferring ingredients quick and easy.

440C is a high-carbon stainless steel known for its excellent hardness and corrosion resistance. Thanks to its high chromium content, it resists rust far better than most carbon steels, making it ideal for kitchen environments. It also takes a fine edge and holds it well, offering a good balance between sharpness and durability. While it doesn’t reach the razor-like edge of traditional carbon steels like Shirogami or Aogami, it requires less maintenance and is easier to care for. A practical choice for chefs who prefer performance without the worry of rust.
